Creamed Peas and New Potatoes!

When I was a kid, I lived in Colorado. I spent many summers here in NY State with my Aunt and Uncle and cousins. I have so many fond memories and that is partly why I landed here in my later life. My Aunt Sue was an amazing cook. I used to love to come to visit, just to eat! This was one of my favorite things I remember her making when I was visiting. They had peas in the garden… so it was fresh and tasty! Yum!
Serves 4 – 6
- 4 cups chicken or vegetable broth
- 1 cup of baby potatoes
- 1 cup of fresh peas
- 2 tbsp. butter
- 1 cup of cream
- 2 tbsp. flour
- 1 tsp. onion powder
- Salt and pepper to taste
Place potatoes and broth in pot, bring to a boil. Reduce heat and simmer for 8 minutes, stir in peas and continue to simmer until potatoes are done, about two more minutes.
Drain and return to pot.
While vegetables are cooking in a small saucepan over medium low heat melt butter, stir in the flour to make a roux.
Whisk in the cream, continue to heat and whisk until it becomes hot and thickens to your desired consistency.
Stir in onion powder, salt and pepper to taste. Pour cream over potatoes and peas.
Stir together and serve hot! Yummy! Enjoy!
