Couscous and Sausage One Pot Toss!

I am in the mood for a comfort dish. What is more comforting that and big bowl of yummy Isreali Couscous and cheesy goodness? I know a lot people might not think of couscous as a comfort dish, but since I have found the Israeli couscous I have fallen in love. Mixed with this fabulous chicken Italian sausage and loads of veggies and some gooey cheese, sounds pretty comforting to me. This one is actually pretty healthy, too.
Prep: 10 Cook: 30
- 2 Tbsp. Olive Oil
- 2 cups of kale, roughly chopped
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 Cup Couscous
- 1 cup, string beans, chopped
- 4 Small links Italian sausage
- 3 Cups Chicken broth
- Salt and pepper to taste
- 1 tsp. Italian seasoning
- 1/2 cup shredded mozzarella
- 1/4 cup shredded Parmesan cheese
Heat olive oil over medium high heat. Stir in kale and saute until it starts to wilt and soften.
Add onion and bell pepper and cook until onion becomes slightly translucent.
Now the sausage and couscous. Cook and stir until couscous starts to toast.
Stir in the green beans.
Add the seasoning.
Add the broth.
Cook stirring occasionally for 15 minutes or until liquid is mostly absorbed and couscous is al dente.
Stir in the cheeses, test the seasoning and adjust to taste.
