I know… I know… it isn’t the egg salad time of year, but when the one’s you love ask you to make them something, you just gotta do it! Enjoy!

Egg Salad Sandwiches!

My Honey is really a good sport! He will sit in Kecia’s Test Kitchen, every night, not ask for certain things, and always eats what I fix. So, yesterday when he was saying he really wanted egg salad I decided that would be what dinner would be tonight. Now normally I would reserve a cold salad filled sandwich for summer time, but hey… he asked. Egg salad is one of my favorite dishes, too. I prefer it with green olives in it, but Honey likes it plain so tonight it is plain. Egg salad is a classic. My mom, the queen of salads used to make egg salad and it was incredible. I guess I learned from the best!

Serves 4



  • 8 hardboiled eggs, peeled
  • ½ cup real mayonnaise
  • 1 tbsp. mustard
  • 1 tbsp. onion, finely diced
  • 1 tsp. celery salt
  • ½ teaspoon garlic powder
  • Pepper to taste
  • 4 soft deli rolls
  • Lettuce


Remove yolk from eggs and place in a small bowl.


Dice egg white and place in a large bowl.


Mash yolks with a fork.


Add the mayo, mustard, onion, celery salt, garlic powder and pepper to taste.


Mix completely.


Pour over egg whites. Stir to completely combine. Taste and adjust your seasoning if necessary.


Place a little lettuce inside each roll.

Classic Egg Salad Sandwiches

Put a couple of scoops of salad on each roll and spread. Serve. For me… egg salad HAS to have potato chips. I love it when the salad falls out of the roll and I can scoop it up with the chips.

      That is how my mom always did it. I think it gives the sauce a great flavor and you don’t get one huge chunk of the yolk! Try it sometime Didi! Thanks for coming to visit me!! <3
