Cilantro Chili Lime Rice!

Something fresh and flavorful to go with my Pan Seared Citrus and Chili Tilapia tonight. My Honey asked me to remake the Tilapia… it was that good! I didn’t feel like the heavier Southwestern Mac and Cheese I made with it the first time, though!
I like to use jasmine rice. It is so fragrant and so flavorful. Even on its own. It just tastes really lovely!
Serves 4 – 6
- 1 cup jasmine rice
- 1 tbsp. Olive Oil
- 2 cups vegetable broth
- 1 clove garlic minced
- 1 tbsp. minced fresh cilantro
- 2 tsp. red chili paste
- Juice from on half lime
- Some Queso Fresco cheese and additional sprig of cilantro for garnish
Place everything except lime juice, cheese and sprig of cilantro in a pan with a tight fitting lid. Bring to boil, reduce heat and simmer for 20 minutes or until rice is tender and liquid is absorbed. Stir in lime juice, cover and let rest for 5 minutes. Fluff with fork, sprinkle a little cheese and garnish with cilantro leaves.
