I used to get lunch at this little bagel shop down the road from where I worked many years ago. They made the most fantastic chicken salad ever. I figured out how they did it and have added my own touch over the years. This chicken salad is so good! It can be served on crackers, in a wrap, on bread, on a bed of greens or my favorite stuffed in a garden fresh, ripe tomato! I have been waiting all summer long tom make this recipe but my tomatoes are really late in ripening this year! So… for one last summertime treat I am making this recipe tonight! I even planned it Monday. Yep… roasted my chicken breast just for this occasion!
Serves 4 – 6
- 3 large chicken breasts, cut up
- 1 cups real mayonnaise
- 2 stalks of celery, chopped
- ½ sweet onion, chopped
- ¼ cup diced chives
- 1 tsp. garlic powder
- Salt and pepper to taste
- Tonight, 4 large tomatoes
- A few leafs of romaine lettuce torn apart.
Cut the tops of the tomatoes off and carefully scoop out the centers. Set aside. (Again you can serve this chicken salad anyway you would like, I just am doing tomatoes tonight)
Place all the rest of the ingredients in the bowl.
Mix thoroughly. Add more mayo if it is too dry.
Place a little lettuce on each plate and top with a tomato. Scoop some of the chicken salad into each tomato, heaping it up on the top. Serve.
My son doesn’t like tomatoes so tonight his is served in a wrap with a little lettuce.
