I do enjoy a good pasta dish! Unfortunately for my waist I love cream based sauces the best! I also enjoy the flavors of a sweet caramelized onion mixed in that creamy cheesy sauce. Blend it with broccoli and chicken you have a complete meal! The guys gobbled this one up… and so did I! Enjoy!
- 2 tbls olive oil
- 1 sweet onion, julienned
- 2 tsp sugar
- 2 boneless skinless chicken breast cut into bite sized cubes
- 4 cloves garlic, minced
- ½ cup dry white wine
- 1 cup chicken broth
- 1 cup chopped broccoli floret’s
- 1 cup cream
- ½ cup Romano cheese shredded
- ½ cup Parmesan shredded
- 1 tsp oregano
- Salt and pepper to taste 8 oz of your favorite pasta, I used penne
- 1 tsp salt
In large sauce pan bring water and salt to boil, add pasta and cook as directed on package.
Meanwhile in deep skillet, heat olive oil over medium heat add chicken and start brown on all sides add onion, sauté slowly, stirring frequently until onion becomes translucent, add sugar and continue to stir until the onions start to brown, being careful not to burn, add garlic, cooking another minute.
Stir in white wine to de-glaze pan, scraping bits off the bottom. Pour in chicken broth, bring to a boil, reduce heat and simmer slowly for 2 minutes while you work on cheese sauce.
Put broccoli in, simmer for an additional 1 minute.
In a measuring cup, whisk together 1 tablespoon flour with ¼ of cream until smooth, set aside. In small sauce pan heat the balance of the cream, stirring so not to scorch.
Once hot, whisk in flour mixture, then slowly whisk in Romano and Parmesan cheeses add oregano and salt and pepper to taste. Slowly whisk this mixture into the chicken and broccoli mixture and continue to cook until thickened.
Stir in cooked pasta. Serve hot with a nice green salad and some crusty bread for cleaning that plate!
