Cheesy Tomato and Ground Beef Tortellini

Quick! Be super-fast, yet taste really good! Story of my life lately. I had some ground beef left from making burgers for our family picnick this past weekend! That will work! Ummmm…. What else is in there? Tortellini! Yes, I gotit for something else, but I can use it tonight and get more! Next? Tomato! Cheese! Oh! They will like this! Over the top cheesy… what’s not to like, right?
I am not kidding. Latel I feel like I am running in six directions at once. I don’t know about you but I don’t want to grav fast food all thhe time. I want to have a real dinner, with real food… This was fast, easy and so good! Make it up next time you are in a crunch for time and skip the drive thru!
Serves 4 to 6
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp. red chili past (or ½ tsp. red pepper flakes)
- 2 cups diced tomatoes
- 1 cup shredded cheddar cheese
- 1 cup light cream
- Salt andpepper to taste
- 1 cup spinach, julienned
- 1 package cheese tortellini, cooked al dente per package directions
In a large skillet, brown ground beef. Drain and add onion. Cook until onion becomes slightly translucent.
Add garlic and red chili paste, continue to cook for an additional minute.
Add tomatoes ad heat through.
In a small sauce pan heat cream over medium heat, stirring often so not to scorch. Whisk in cheese and continue to whisk until it is smooth and creamy. Add salt and pepper to taste.
Pour into meat mixture.
Now stir in pasta and spinach and heat until hot and bubbly. Serve with a salad and some garlic toast! (tonight I used left over hotdog buns! I love using up left over rolls and bread this way!)
