Cheesy Sausage and Tomato Pasta Bake!

Originally I was planning on smoking a Corned Beef today. I got it on sale after St Patrick’s Day! I will save it for another time or something else… It is unbelievably cold which makes it too difficult to smoke meats. So, the great back paddler, re-planner I am has decided on this cheesy and filling dish to feed the masses with tonight instead! I know! 4 doesn’t qualify as masses… I had some Italian sausage and some diced tomatoes in the fridge. And thought, mmmm pasta always is a hit and I am pretty sure all of us will be home for dinner tonight!
Serves at least 6
One package of your favorite pasta (or of course homemade)
1 tbsp. olive oil
2 tsps. kosher salt
1 pound ground Italian sausage
1 sweet onion julienned
2 cups diced tomatoes
2 cloves garlic minced
1 tbsp. Basil paste (Or fresh, minced)
1 tsp. dry oregano
Salt and pepper to taste
1 cup spinach julienne
1 ½ cups light cream
¾ cup shredded Parmesan cheese
½ cup shredded mozzarella
Preheat oven to 350*F
Cook pasta according to directions adding oil and salt to water undercooking by one minute. Drain and set aside.
Brown sausage over medium heat, drain.
Add onion and cook until starting to soften.
Add tomato, garlic, basil oregano salt and pepper and heat through.
Stir in spinach.
In separate sauce pan heat cream until hot and quickly whisk in cheese, whisk until smooth and creamy.
Pour cheese sauce over meat mixture and combine.
Now mix together meat and pasta.
Put in casserole dish and top with the mozzarella cheese.
Place in oven for 20 to 30 minutes or until hot and bubble turning slightly brown on top.
Serve hot with a little more Parmesan cheese on top.
