One of my family’s favorite things is my Meat Sauce. The first night I serve it over pasta, but I usually have enough left over to put in the freezer for other things. Many times I will make my Stuffed Pepper Soup with it, but lately we have been gobbling up sandwiches, so here is my latest creation which seemed to be a hit with my guys!
- 2 tbls olive oil
- 4 ciabatta rolls cut in half
- 2 cups of my Meat Sauce or your favorite recipe
- 1 cup shredded mozzarella cheese
- Favorite pizza toppings, such as bell pepper, onion, mushrooms, pepperoni, etc.
- Parmesan cheese to taste
Preheat oven to 400 degrees
Thoroughly heat sauce over medium heat in small saucepan.
While sauce is heating, brush olive oil over the insides of the rolls, place rolls in oven and toast them until a light golden brown.
When rolls are toasty, about 10 minutes, remove from oven. Sprinkle each side of the roll with mozzarella cheese, place topping of your choice on top of the cheese on top half of roll, put back in oven until hot and bubbly.
Remove from oven, scoop about a half a cup of sauce over the bottom half of each sandwich, put top on and serve. Have a knife and fork or plenty of napkins on hand!
