Cheddar Stuffed Avocado Salsa Burgers

Everyone in my house likes a good burger, I am no exception. But… I get bored with a plain old burger, so I went to the store and saw so wonderful avocados and came up with this. Now, not everyone in my house likes a mega large stuffed burger, so I made my son’s with just the cheese melted on top. But either way, homemade salsa and cheddar with avocados? How on earth can that be bad? It can’t, right? Serve it up with some Avocado Corn Salad, oh boy!
Serves 4
Ingredients

1 pound ground beef – or turkey
1 cup shredded cheddar cheese, divided
Salt and pepper to taste
1 cup salsa, (my Homemade Salsarecipe link here)
1 avocado sliced
4 buns, homemade or your favorite burger bun (I don’t bake… sorry no link here)
Instructions

Preheat grill to medium.
Separate ground beef into 8 equal sections; pat them all down into thin patties.On top of four of the patties, in the center, place a table spoon of the cheese.

Place top patty onto of cheese, carefully seal together and reshape, try not to over work the meat. Place on a plate and sprinkle generously with salt and pepper.

Place patties on preheated grill and cook on first side for 5 minutes, flip and repeat. Now my family likes their burgers done, but not dry so I flip again and go an additional 2 minutes, flip (Test for an internal temp of at least 160*F)

And now place the rest of the cheese on top of the burgers. Close lid for about a minute, check to see if cheese is melted. Remove burgers from grill.

Place one burger on each bun bottom

Cover with avocado and some salsa, replace top of bun.

Serve hot. Goes great with some Avocado Corn Salad!
