Caprese Quesadilla!

I have all of this left over grilled Italian Sausage in the freezer from our party so I need to come up with a few ways to use it in new recipes! I love it because being grilled gives it such a fantastic flavor in things. My Honey, he love quesadillas so I thought maybe I could come up with a recipe for a new one that had use for this sausage, too!

Serves 4



  • 4 large flour tortillas
  • 2 cups shredded mozzarella cheese
  • 2 grilled Italian sausage links chopped
  • ½ cup chopped roma tomatoes
  • ½ cup basil leaves julienned
  • ¼ cup olive oil
  • Salt and pepper to taste
  • Optional side of Simple Tomato Dipping Sauce


Spray large skillet (or you could do them on the grill, I am tonight) with cooking spray. Heat over medium heat. Place tortilla in skillet, place ½ cup of the shredded cheese on top,


Next ¼ of the sausage, roma tomatoes


And basil. Heat until it begins to melt drizzle a little olive oil over the top and sprinkle with the salt and pepper,


Fold over and brown first side, flip and brown second side. Remove from heat and let cool slightly prior to cutting. Cut into 4 slices and serve with a side of sauce if desired. Repeat with all tortillas, one per person.
