Beer Cheese Sausage and Potato Soup!

It is a little more than just beer cheese soup, it is Beer Cheese Soup with kielbasa and potatoes. I am sure my Honey will be very happy with how good it is! I absolutely can’t wait to try this. It should be creamy, savory and cheesy! So good!
- 1 tbsp. Olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 kielbasa, sliced
- 6 large red potatoes, peeled and diced
- 1 bottle of your favorite beer
- 3 cups, chicken broth
- 1 tbsp. parsley
- 2 tsp. onion powder
- 1 tsp. ground mustard
- 2 tsp. chipotle
- 1 tbsp. sodium free chicken base
- 1 cup cream
- 2 cups, extra sharp cheddar cheese, shredded
- Salt and pepper to taste
In a large pot, heat the olive oil over medium heat. Add the onion and cook until slightly translucent. Add the balance of the ingredients up to the cream. Cover and simmer for about a half hour or until potatoes are fork tender. In a sauce pan over medium heat, heat the cream, stirring constantly. When the cream is hot, whisk in the cheddar cheese until smooth. Pour the cheese sauce into the soup, stirring until smooth. Taste your seasoning and adjust.
Serve hot. Something yummy to go with it would be crusty sour dough bread.
