BBQ Pork Pizza

Great way to use up any left over pork roast! I used left over pork shoulder that I had smoked a few days before. This makes a very quick weeknight meal that pleases the entire family… at least my family!
- ¼ cup olive oil
- Large loaf of French bread or 1 bakery crust or make your own. (Pizza Crust)
- 1 cup chopped or shredded left over pork
- 1 red onion chopped
- ½ cup BBQ Sauce
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella
Heat oven to 350 F
Pre-crisp your crust:
French bread, place on cookie sheet and brush with olive oil and place in oven until it starts to brown about 7 minutes. If you make your own, I like to pre-bake for 10 minutes.
Bakery crust shouldn’t need to be pre-crisped, but if you desire them a little crispy five minute should do place on pizza pan.
Brush your choice of crust with the BBQ sauce, I like it to be a thinner coating, but you can add more if you desire. Layer your pork and onions on top of the sauce.
Sprinkle both types of cheese the pizzas.
Place back in oven for about 10 minutes, or until bubbly and heated through. Slice and serve!
Great with a drizzle of ranch salad dressing or extra BBQ Sauce… serve with a nice green salad or coleslaw.
