Baked Chicken Parm Sandwich!

Again, this version of chicken Parm is not going to be fried. I like to try to lighten things up just a touch. I know, I still have the gooey cheese, the bread… but at least it isn’t deep fried like the subs you see at the sub shop! Not that those are bad, this is just how I like to do it! The best part is, I making it on the grill and that makes less dishes!
- 2 boneless skinless chicken breasts, sliced thin
- 1/4 cup olive oil
- 1/4 cup Balsamic Vinegar
- 1 garlic clove, minced
- 1 tsp. Salt
- 1 tsp. Italian seasoning
- Pepper to taste
- 1 cup shredded mozzarella
- 1 cup marinara sauce
- 4 of your favorite crusty buns, I like Telera Rolls….
- Parmesan to taste
Place chicken in a large zipper bag. Add the olive oil, balsamic, garlic, salt, Italian seasoning and pepper. Seal bag and shake to coat. Let stand a 10 to 15 minutes while you preheat the oven to 400*F.
Line a baking sheet with parchment paper. Place chicken on baking sheet. Cook 15 minutes. Check to make sure it is done, 165°F. If not, cook an additional 2 to 3 minutes.
Remove from oven and place on a plate, cover with foil.
Cover another baking sheet with foil or parchment paper. Place the bottoms of your buns on the foil, in a row, spray with olive oil spray. Place in oven for a few moments to toast lightly.
Place an 1/8 cup of the mozzarella on each bun.
Now lay a chicken piece on top of the cheese.
Add a little more cheese to the top. Flip the tops of buns over and lay next to sandwiches and sprinkle with parmesan.
Place back in oven until cheese melts. Remove from oven and place on plates, add some marinara to tops of chicken.
Place tops back on the sandwiches,. serve witha nice salad… yummy!
