It is really cold, but my guys want hamburgers. I really don’t want beans today and the sunshine is totally inspiring me. I think I want picnic food today, so I decided I would whip up a pasta salad. This just sounded so good!
2 cups pasta of your choice, I am using elbows
½ sweet onion finely diced
2 stalks celery finely chopped
1 carrot finely chopped
½ cup mayonnaise
¼ cup sour cream
1 clove garlic crushed, finely
1 tsp parsley flakes
1 tsp dill paste
1 tsp onion powder
Salt and pepper to taste
8 slices bacon fried crisp and crumbled
Cook pasta according to package directions, drain, rinse with cold water. Mix with onion celery and carrot, set aside.
In separate bowl mix together mayonnaise, sour cream, buttermilk, garlic, parsley, dill, onion powder and salt and pepper with a whisk.
Add Dressing to pasta and veggies.
Mix into pasta mixture.
Stir in bacon.
Cover and refrigerate for at least an hour for flavors to incorporate.
