Avocado Corn Salad

I love grilling, I know… I have said it before, it is sooo true! Nothing better to go with grilled foods than some kind of salad. This one has a little southwestern flavor to it, so it will go great with a number of recipes you will find on my site! The one I created it to go with is my Cheddar Stuffed Avocado Salsa Burgers. (recipe coming soon!) I think it will be the perfect companion!
Serves 4 to 6
1 package frozen corn thawed (of course when in season you can go for fresh!)
10 – 15 grape or cherry tomatoes
1 avocado diced
½ cup diced red onion
1 tsp cumin
1 tsp chili powder
1 tbsp. olive oil
2 tsps. cilantro
1 – 2 tbsps. fresh lime juice
Salt and pepper to taste
Combine all ingredients in a bowl.
Stir well… but be careful not to mash your avocado.
Refrigerate for at least 30 minutes to let the juices and flavors combine.
