Tomato Basil Pizza!

Tonight is pizza night. I am actually using Naan breads tonight in place of my usual crust because
of the lack of time I have to get dinner on the table! I love this pizza… It is fantastic and vegetarian! I found these lovely heirloom tomatoes at the market and thought they would make this pizza sing.
- 1 Pizza crust (My favorite recipe)
- 2 Tomatoes, thinly sliced
- 1 cup fresh basil
- ¼ red onion, sliced
- 2 tbsp. Extra Virgin Olive Oil
- 2 cups shredded Mozzarella
- Italian seasoning
- 1 Tbsp. Shredded Parmesan
Preheat oven to 375° F
Prepare crust as directed and place on pizza pan or stone. I like to prebake my crust for a little crispiness for about 10 – 15 minutes until it just starts to brown slightly.
Sprinkle the cheese around the top of the pizza.
Lay down some basil leaves, then the onion and tomato.
Drizzle with the olive oil and sprinkle with Italian seasoning. And a little Parmesan.
Bake for an additional 10 – 15 minutes or until cheese is melted and bubbly and crust is nicely browned.
Let stand for 5 minutes before slicing into eight slices. Serve with a nice green salad. Or some extra fresh tomato slices.
