Tomato and Basil Pasta Toss!

Finally! My basil is big enough for me to use it!! Yay! Nothing makes me happier than fresh tomatoes and basil mixed into pasta! This is such a simple, yet completely flavorful dish! You will truly love it.
- 1 package Mezzi Rigatoni
- 1 cup grape tomatoes, halved
- ½ cup basil, julienned
- 1 clove garlic, crushed
- ¼ cup olive oil
- Salt and pepper to taste
- Shredded Parmesan cheese.
Place halved tomatoes in colander. Cook rigatoni to desired tenderness.
Drain pasta over tomatoes. (This just heats the tomatoes through, but doesn’t cook them so they are still really fresh tasting!)
Place pasta and tomatoes back in pot. Stir in basil, garlic, olive oil, salt and pepper.
Sprinkle with Parmesan cheese to your taste. Serve hot with a nice green salad!
