The Best Boiled Potatoes Ever!

I know, what is so special about a boiled potato? Well I gotta tell you these really are good. I like boiled potatoes, my mom used to serve them all the time. But sometimes, I have to be honest, they are BORING! Not these little spuds! These rock! My husband always goes back for seconds when I make these. Now this can be vegetarian if you switch out the chicken broth to vegetable, which is really good, too!
- 4 medium red potatoes, washed and quartered
- 4 cups chicken or vegetable broth
- 1 tbsp. salt
- 1 tbsp. dried chives or a handful of chopped fresh chives
- 2 tbsp. butter
- Salt and pepper to taste
Place potato quarters in a large pot.
Add the broth and salt. Bring to a boil, reduce heat and simmer for 7 – 10 minutes or until fork tender. Be careful to not overcook so they are falling apart.
Drain and return to pot. Add the balance of the ingredients and stir until completely coated.
Simple, but so good!
