Spicy Citrus Shrimp Skewers!

So, last night I made a lot of Mexican food for my son, his birthday request. I have a bit of it left, but I want him to finish it up since it was his request. I do have a lot of extra rice left as well as some shrimp from frozen shrimp that I got for shrimp cocktail, so I thought it would be fun to us as a meal, not an appetizer. Lightly marinade and throw on the grill, serve it over some rice! Sounds great, right?
Serves 2
Ingredients:
- 4 wooden skewers
- 12 medium cooked shrimp, thawed
- ¼ cup olive oil
- Juice from 1 lime
- 2 tsp. chili paste
- 1 tsp. kosher salt
- 2 tsp. cilantro
- 1 tsp. cumin
- 1 tsp. chili powder
- 1 tsp. garlic powder
Soak your wooden skewers in water
Place all ingredients into a large zipper bag and shake to completely combine and coat the shrimp. Let marinate for 30 minutes.
Preheat grill to medium heat
Place 3 shrimp on each wooden skewer. Lay shrimp on preheated grill for 2 minutes, flip and repeat. Remove shrimp from grill.
Serve with rice, like my Cilantro Chili Lime Rice and salad such as Avocado Corn Salad. You could absolutely use raw shrimp, just adjust your cooking time by a couple of minutes.
Also serve as an appetizer by itself!
