Making quesadillas with some left-over chicken tonight and I also have 4 avocados I need to use up! I toyed with the idea of putting avocado in the quesadillas, but I really love guacamole, so I will make that instead. Plus my Honey shared something he found saying I could mash up the avocados, put them in a freezer bag and freeze them so they don’t spoil! Great idea!!
- 2 ripe avocados
- 1 jalapeno, seeded and veins removed
- ¼ cup diced red onion
- 1 tsp. ground cumin
- 1 tsp. chipotle chili powder
- 1 tsp. garlic powder
- 1 tsp. cilantro (dried) or chop up some fresh to your taste
- Juice from one lime
- Salt to taste
Peel and place avocados in a bowl, add remainder of the ingredients and bash together with a fork. I like my guacamole slightly chunky, however you can mash it to the consistency that you prefer.
Serve with chips or like I am with quesadillas.
