Spicy Chicken and Cheddar Pasta!

Today has been a little busy. More than I expected. I wanted to through together something tasty, fast and satisfying. Pasta is so easy to work with and pretty much the entire family really likes it.
Have you ever had a dish called “Rattlesnake Pasta” from Uno? Spicy, with jalapenos, full of nice pieces of chicken in a creamy, spicy sauce? Yeah, it’s good. This is somewhat similar, maybe a little lighter and very flavorful.
1 pound of your favorite cut of pasta, I like penne for this one.
2 tbsp. olive oil
1 large boneless skinless chicken breast, cut into cubes
1 large onion, julienned
½ red bell pepper, chopped
1 to 2 jalapenos, seeded, and chopped fine
1 clove garlic crushed
1 tsp chili powder
1 tsp cumin
2 tsps Kosher salt
Black pepper to taste
1 cup light cream
¾ cup finely shredded sharp cheddar cheese (I use 2%)
Prepare pasta as directed.
In deep skillet, heat olive oil over medium high heat, add chicken and brown.
Add onion, bell and jalapeno peppers; cook until onion is slightly translucent.
In sauce pan, pour cream, add garlic and chili powder, cumin, heat through.
Slowly whisk in cheese until smooth and creamy.
Pour chicken mixture in with pasta and toss together.
Pour cheese sauce over pasta mixture and stir.
Serve hot. Garnish with a nice sprig of cilantro and some chopped scallions.
Make a lot... my son had three helpings and my Honey... he had two!
