Smoked Sausage and Fettuccine Alfredo!

I think I mentioned recently how incredibly crazy things are around here at this time of year. Between my work schedule, my honey’s work schedule and my son’s summer activities, it is crazy! Plus right now we are trying to get things together for our annual party. Whew! I love easy recipes! This one is fast, easy and sooooo good! I know my family will love it, yours too!! I got a really great deal on sausages the other day, too. By 2 get 3 free and they freeze wonderfully!
- ½ Smoked Sausage, sliced (used Hillshire Farms Smoked Turkey Sausage)
- 1 tbsp. olive oil
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 sweet onion, diced
- 1 clove garlic, minced
- 1 cup light cream
- ½ cup parmesan cheese, shredded
- ½ tbsp. Tony Cachere’s Creole Seasoning (I use the salt free one)
- Salt and pepper to taste
- 1 package fettuccine, cooked as directed
In a deep skillet cook sausages over medium heat until the start to brown.
Add olive oil, peppers and onions. Cook until peppers start to soften and onion is slightly translucent. Add garlic and cook an additional minute.
Meanwhile in a small sauce pan, heat cream over medium low heat, stirring often so not to scorch. Quickly whisk in cheese, and continue to whisk until completely melted and sauce is smooth. Whisk in seasonings.
Pour pasta over the sausage mixture and stir to combine.
Add cheese sauce and mix thoroughly. Serve hot. I served with a simple tossed salad tonight.
