Savory Caramelized Onion Mashed Potatoes!

Serves 4 – 6
I hadn’t made my Honey mashed potatoes in a long while so I came up with savory potato dish to go with my Grilled Pork Tenderloin with Spicy Maple Marinade. These potatoes came out so incredibly creamy and tasty!
- 4 medium red potatoes, peeled and cubed
- 4 cups chicken or vegetable broth
- 2 tbsp. olive oil
- 2 onions, julienned
- ¼ cup marsala or dry red wine
- 1 tsp. sugar
- 2 tsps. Kosher salt
- ½ cup light cream
- ¼ cup butter
- More salt and pepper to taste
In a large skillet, heat oil over medium heat. Add onion and cook until onion becomes soft, be careful not to burn. Once softened add the wine sugar and two teaspoons of salt. Continue to cook, stirring occasionally, be patient, it WILL pay off.
Cook until onions become a deep caramel color and are very soft.
Meanwhile… sip some wine and place potatoes in a large saucepan with the broth, bring to a boil, reduce heat and simmer 10 minutes or until potatoes are soft.
Drain and return to pan. Add onion, cream, butter salt and pepper to potatoes and start to mash with that potato masher! I like the old fashioned kind… it is kind of therapeutic at the end of a tough day to mash those taters! Mash until mostly smooth, then take a nice stiff spoon, I like my favorite wooden spoon, and whip until creamy.
Serve hot! Tonight I am serving with my Grilled Pork Tenderloin with Spicy Maple Marinade!
