Sausage and Tomato Alfredo Pizza!

I asked my Honey the other night what meat he would like me to get out of the freezer for tonight and he said Italian Sausage! I should have known, he really likes that! So I have been racking my brain since to come up with something new and different that we would all like since there are four of us tonight to please… Rare occasion, I know! I thought casserole? Hmmm noodles? No I just made pasta. Um… sandwiches? No I did Italian Sausage Sandwiches last week. I know! Rice… I just don’t think it will make everyone happy though. Oh it is cold and rainy today I could make soup! NO… again, it won’t make everyone happy. Ah… Pizza. Well, what is so different about using sausage on pizza you ask? Well, I will tell you, this is different. Homemade dough and my Alfredo Sauce to start! I think it will be a hit!
- Double batch of Homemade Pizza Dough (My favorite recipe here or your favorite)
- ½ pound Ground Italian Sausage
- 1/2 cup Creamy Alfredo Sauce (recipe here or your favorite)
- 1 cup diced tomatoes
- ½ onion julienned
- 1/2 cup spinach julienned
- 1 cup shredded mozzarella
- 2 tsps. Italian Seasoning.
- 1 – 2 tbsp. corn meal
I use this method with the dough above to get it to rise better.
Preheat oven to 175°
In liquid measuring cup dissolve yeast and sugar in warm water, let stand until foamy, about 3 – 5 minutes
Insert dough or metal chopping blade in work bow, add flour, olive oil, salt and Italian seasoning. With machine running pour the liquid mixture through the feed tube as fast as the flour absorbs it. Process until dough cleans the sides of the work bowl and forms a ball. Then process for 30 seconds to knead dough. Dough may be slightly sticky.
Turn off oven. Spray oven proof bowl with olive oil and put dough in bowl. Spray top of dough with oil. Cover with towel and place in oven for 45 minutes to rise.
Turn heat back up to 375°
Remove dough from oven. Lightly flour flat surface and roll dough out onto it, punch down and roll out round as large as you wish.
While dough is rising, make your Alfredo sauce, stir in tomatoes.
Brown your sausage, drain and set aside.
Spay large pizza pan with nonstick spray and sprinkle with the corn meal, place crust on pan. Bake crust for 10 minutes without topping, to get it partially cooked. (Only because I am using a double batch of crust) Remove from oven.
Spread your sauce over the crust,
Now add sausage, onion.
Top with the mozzarella cheese and sprinkle with the Italian sausage.
Place back in oven and bake an additional 10 to 15 minutes until hot and bubble and crust is browning.
Cut into 8 slices, serve hot.
