Roasted Red Pepper and Garlic Sauce!

Sitting outside on the porch with my husband in the back yard is one of our favorite warmer weather things to do. It is wonderful to sit and see the property, hear the birds sing, just relax. Last night I was sitting with him and saw the tail end of my garden, which was absolutely horrible, But I did have a few peppers that were still left. They had turned a gorgeous shade of red. I went over for a closer look and just had this wonderful sauce pop into my head. I think it will be such a nice change from the traditional tomato sauce.
Prep Time” 15 minutes Cook Time: 2 hours (roasting the vegetables)
- 6 medium red bell peppers
- 10 cloves of garlic
- ¼ cup olive oil
- t tsp. Basil
- 1 tsp. Salt
- pepper to taste
- 1 cup light cream
- ½ cup shredded Parmesan cheese
Preheat oven to 250* F
Cut and seed peppers and place into a small oven proof dish. Add garlic cloves. And olive oil. Cover with foil and place in oven for one hour.
Remove from oven and let cool slightly.
Place in blender and blend smooth.
Add basil salt and pepper stir together.
Now add cream. Heat until hot, stirring often.
When hot whisk in Parmesan cheese.
Whisk until smooth.
Serve over your choice of pasta.
