Roasted Garlic Smashed Potatoes!

A rustic side dish to go with my Grilled Beef Tenderloin Fillets. My Honey loves potatoes, as I have mentioned before. I love roasted garlic, I think this will be a delicious and FLAVORFUL combination! I can’t wait for dinner tonight!
- 6 cloves of garlic whole
- ¼ cup dry white wine
- 2 tbsp. olive oil
- 2 medium red potatoes, scrubbed and cut into cubes
- 4 cups chicken broth
- ½ cup light cream
- 1 tbsp butter
- Kosher salt and fresh ground pepper to taste
Preheat oven to 350°F
In a small ovenproof skillet heat oil over medium heat, toss in garlic and sauté for a minute or so,
add the wine and place in oven for 15 to 20 minutes until garlic is very soft. I have found the added liquid makes the process go a little quicker. I am actually doing extra garlic so I can have it with my steak, too.
Meanwhile, place potatoes in chicken broth. Bring to a boil and boil until fork tender. Approximately 10 minutes. Depending on how small you made your cubes.
Remove garlic from oven and drain liquid. Drain potatoes and place back in pan. Add garlic, cream butter and salt and pepper. Mash with potato masher until almost smooth, beat with stiff spoon until creamy.
