Refried Beans!

I needed a side to go with the amazing enchiladas, Aunt Bee’s Caramelized Onion and Cream Cheese  Chicken Enchiladas I made last night. I love Refried Beans, so that is what it ended up “beaning.” Now I know you can just go grab a can of premade beans, but why? It is so easy to make your own! I have done it with dried beans and canned pinto beans, but I was a tad short on time on this occasion so I did settle for canned pintos. This recipe is derived from the recipe on the Goya Pinto Bean can.

Serves: 6

  • 1 can Goya Pinto Beans (or two cups re-hydrated dried Pintos)
  • 1 Tbsp. Olive Oil
  • ½ onion, diced
  • 1 clove garlic, crushed
  • 1 Tbsp. red pepper paste
  • 1 tsp. cumin
  • 1 tsp. chipotle chili powder
  • Salt to taste
  • ¼ cup Queso Fresco cheese or shredded jack cheese

Preheat oven to 350*

Drain most of the liquid off the beans, place in bowl. Add all remaining ingredients except for cheese

Mash beans with a masher or fork until slightly chunky, stir to make sure all is mixed together.

Top with the cheese, cover and place in oven for 30 minutes or until hot and bubbly.

Remove lid for last 5 minutes.
