Quinoa Aioli Olio! (Pressure Cooker)

I am trying to eat healthier… TRYING. So replacing pasta with healthy quinoa is a way to do that. I love Pasta Aioli Olio, simple, flavorful and delicious. But, pasta is supposed to be a rare treat for me. I wanted the flavor and decided to give it a go with quinoa. My husband purchased a MealPot Pressure Cooker for me for my birthday, it makes everything so quick and easy! This dish was fast and really delicious! Full of flavor, protein and was comforting and filling. I will be making it again!
- 1 cup Quinoa, rinsed
- 2 cloves garlic minced (I use more because I love it so!)
- 1 ½ cups water
- 1 tbsp. olive oil
- 1 tsp. red pepper flakes
- Salt and pepper to taste
- 1 tbsp. partially dried basil or a handful of fresh basil leaves, julienned
- Shredded Parmesan to taste (use vegan alternative if desired)
Place the quinoa, garlic and water into the pressure cooker. Place the lid on and turn the lever to sealing. Pressure cook for 1 minute. Natural release for 15- 20 minutes. Turn lever to release to make sure all pressure is gone and remove lid. Add the olive oil, pepper flakes, salt and pepper, stir. Taste and adjust. Add the basil and toss together. Place in bowls and top with parmesan cheese.
Serve hot with a nice salad.
