Pulled Pork Mac and Cheese!

Summer is the time for some BBQ and I love making a pork loin for it. Quite often there is left over pork loin or tenderloin in my house! It is one of my favorites. Sometimes I like to take those left over, shred them and add some BBQ sauce to it to give me some pulled pork. Tonight I thought I would combine two favorites for my guys! I am sure they will love it!
- 2 cups elbow macaroni
- 1 cup left over pork loin
- ½ cup of your favorite BBQ Sauce and a little more for a drizzle
- 1 ½ cup shredded sharp cheddar cheese and a little more for a sprinkle
- 1 cup light cream
- 1 tsp. ground mustard
- Salt and pepper to taste
Cook pasta according to directions for al dente pasta, drain and set aside.
While the pasta is cooking heat the pork and BBQ sauce in a small pan.
Using the pot you boiled the pasta in, heat the cream, mustard and salt and pepper over medium heat until hot. Slowly whisk in the cheese until it is completely melted and cream.
Stir the cooked macaroni into the cheese sauce. Continue to stir until completely combined.
Scoop some of the mac and cheese onto each plate, top with a sprinkle of cheddar, top the mac and cheese with a little of the pork mixture and drizzle a little extra sauce over the dish. Serve hot with a nice veggie or salad!
