Pork Salad Sandwich!

Every year we have an annual family 4th of July party at our house. Every year for the past two years we have had it catered. AND… every year we have tons of left overs! I have piles of smoked chicken quarters and packages of pulled pork in the freezer! I must come up with some different things to make with it! I have made Pulled Pork Mac and Cheese, BBQ Pulled Pork Pasta, Italian Pulled Pork Melts, BBQ Pork Pizza, so I wanted something different today! My husband really likes a good chicken salad, so I thought hey, why not make a salad out of some of my left-over pulled pork?? ! Plus the weather is finally breaking and we might get some work outside done! This will make a great quick meal!
- 1 cup left over pulled pork
- 1 tbsp. onion, finely chopped
- 2 small ribs of celery with leaves, chopped
- ¼ cup mayonnaise
- 1 tbsp. barbeque sauce
- 2 hamburger buns
- 1 tbsp. mayonnaise
- 2 lettuce leaves
- 2 tomato slices
- 2 slices of sharp cheddar or American (optional)
Combine the pork, onion, celery, mayo and barbecue sauce in a bowl. Spread the other tablespoon of mayo on the insides of the buns. Place buns, mayo side down in a hot skillet. Cook until lightly browned. Place half the pork salad on each bun bottom, top with the lettuce, tomato and cheese. Serve immediately with a salad or chips and a pickle.
Well, it was a hit! Hubby really did enjoy these sandwiches! I must say, don’t knock it until you try it!
