This can be a meal or an appetizer… great game day food, too!!
½ pound lean steak cut of your choice
2 tbsp olive oil
1 bell pepper sliced
1 onion sliced
4 large tortillas
2 cups shredded provolone cheese
Trim fat and slice steak into thin strips.
In skillet heat olive oil over medium heat; add steak brown on all sides
Throw in onion and pepper
continue to cook until vegetables are soften. Remove from heat and set aside.
Spray non stick spray on griddle or in large skillet place open tortillas on griddle and sprinkle cheese on tortillas completely covering. (I used slices)
Cover half of each tortilla with the meat and vegetable mixture. Heat over medium low heat until cheese starts to melt
Now fold in half.
Continue to cook until bottom side of tortilla is brown, turn and repeat on other side.
Remove from heat and allow to cool for just a couple of minutes, cut into wedges. I served with my Garlic Parmesan Sauce
