Pepperoni Pasta

I need something fast tonight! Well all week really, but this will be tonight! Something good, filling and that I don’t need to thaw out! A pasta dish! That is it! Now I know, you have seen people do pepperoni in a pasta dish before, but I think this will be a little different for you and hopefully my family will love it! Don’t forget to add some veggies for them to eat!

Serves 4



  • 1 cup of your favorite bite sized pasta
  • ½ cup pepperoni slices
  • 1 tbsp olive oil
  • 1 small sweet onion, julienned
  • ½ bell pepper diced
  • 1 clove garlic minced
  • 2 cups diced tomatoes
  • ½ cup fresh basil, julienned
  • ½ cup baby spinach julienned
  • 1 tsp. oregano
  • Salt and pepper to taste
  • ½ cup cubed fresh mozzarella
  • ¼ cup shredded Parmesan

Cook pasta according to package instructions, drain and set aside.


In a deep skillet over medium heat, sauté pepperoni.


Add the olive oil, onion and peppers. Cook until onion becomes slightly translucent. Add garlic and cook an additional minute… don’t burn the garlic!


Pour in diced tomatoes, stir and heat through.


Add the basil, spinach, oregano and salt and pepper. Stir through.


Now put the pasta in and the mozzarella stir and heat through so mozzarella melts.


Plate and sprinkle with some parmesan cheese! Serve hot with a salad and bread! Yum!
