One Skillet Ground Beef and Broccoli Rice!

One pot dishes are all the rage now! I am all on board with that. Anything that makes for less dishes, and little time is totally what I need! But it needs to be hearty and healthful, too. I have been doing so many pasta dishes lately, I think a change up of some rice will be such nice alternative!
- 1 pound lean ground beef or ground turkey
- 1 Onion julienned
- 2 clove garlic, minced
- 1 cup wild rice blend. My favorite is Lundberg Wild Rice Basmati Blend
- 1 2/3 cups beef broth or vegetable if you prefer
- 1 tsp. crushed ginger
- 2 tsps. Red chili paste
- ¼ cup teriyaki sauce
- 2 cups broccoli florets
- Salt and pepper to taste
- Slivered Almonds (toasted)
In large skillet, brown ground beef. Drain and return to skillet. Add Onion and cook until onion becomes slightly translucent. Add garlic and rice. Stir to blend well.
Add broth, ginger, chili paste and teriyaki sauce. Bring to a boil. Cover and simmer for 33 minutes.
Add broccoli and cook an additional two minutes or until rice is tender and liquid is absorbed. Stir in salt and pepper to taste. Cover and let stand for 10 minutes.
Fluff with fork and sprinkle almonds over the top. Serve Hot.
