One Pot Chicken Parm Toss!

I am so busy lately it is so difficult to put something fun, new and fabulous on the table. This is easy with the great flavors of Chicken Parm, but in a one pot dish! Plus a tad bit healthier because there is no frying or breading involved. I am pretty sure it will be a hit!
- 1 large chicken breast cut into small cubes
- 2 tbsp. olive oil
- 1 onion, julienned
- 2 cloves garlic, minced
- 2 tsps. Italian seasoning
- 1 tsp. Oregano
- 2 tsps. Parsley
- 1 tsp. dried mint
- 8 ounces of your favorite bite sized pasta I used Fusilli
- 2 cups tomato sauce
- 3 cups chicken or vegetable broth
- Salt and pepper to taste
- 1 cup shredded mozzarella
- ¼ shredded parmesan
In a large stock pot heat olive oil over medium heat. Add chicken and cook until starting to brown. Add onion and continue to cook until it is slightly translucent. Toss in garlic, Italian seasoning and oregano, parsley, mint and cook until it becomes fragrant.
Now add the pasta, sauce and broth. Cook 15 minutes until pasta is tender and liquid is absorbed.
Remove from heat and add salt and pepper. Toss with the cheese and serve hot with a nice salad.
