One Pot Cheesy Rice!

Now I am like a lot of people, trying to incorporate a little more veggie into the diet! My step daughter recently started eating vegetarian, my son is trying to eat a little healthier, I want to eat a little healthier, but you know… it still has to taste good, right!!?? Right! So this could be a really quick and easy meal idea for a great healthy side or for my step daughter a nice main meal.
Serves 4 – 6
- 1 cup whole grain rice
- 2 cups vegetable or chicken broth
- 1 zucchini, shredded
- 1 jalapeno, seeded and minced fine (Adj. to your taste, I used 2 I like a bit of heat)
- 1 clove garlic minced
- 1 cup broccoli florets
- salt and pepper to taste
- 1/2 cup shredded sharp cheddar cheese
In a large sauce pan, place the rice, broth, zucchini, jalapeno and garlic.
Bring to a boil, cover and simmer 20 minutes or until liquid is absorbed and rice is tender. Add a little more liquid if needed.
In the last two to three minutes of the simmer add your broccoli.
Remove from heat and let stand five minutes. Stir in the salt and pepper to taste, add cheese.
Stir until completely melted and combined.
