Last night I had meatloaf, it was fabulous! Tonight I want to do something fun with the leftovers so I thought a sandwich might be fun! Plus my family really likes ooey gooey hot and melty sandwiches! One thing I like to do with meatloaf is put slices of it on the grill to warm it for sandwiches, but tonight it is a little too cold and snowy so I will make these on the stove! They will still be super tasty because of the delicious caramelized onions!
1 tbsp olive oil
2 sweet onions, thinly sliced
1 tsp kosher salt
1 tsp granulated sugar
4 ciabatta rolls, sliced in half
4 ½ to ¾ inch slices of left over meatloaf
4 slices of sharp cheddar cheese
4 tbsp herb cheese
In a large skillet heat olive oil over medium low heat add onion and cook, stirring often until they become soft.
Sprinkle salt an sugar over them and continue to stir and cook until they start to become brown and very soft, be careful not to burn them.
On a griddle top or another large skillet place rolls open face down and toast lightly. Remove from pan and set aside for now. Spray pan with a little non stick spray and put sliced meatloaf in pan, warm through on first side.
Flip over and warm other side two to three minutes each side. Flip one more time, top with some onion.
And then a slice of the cheddar cheese.
Place lid on top of skillet to trap in heat and melt the cheese.
Meanwhile, spread the bottom half of each roll with on tablespoon herb cheese.
Now, remove meatloaf from heat, place one slice on each roll on top of herb cheese.
Serve hot with a nice salad!
