Meatball and Tomato Soup!

I am so excited that summer is here so I can get more tomatoes from my garden to stick in the freezer! I still have two bags so I am making this soup! Doesn’t it sound really yummy? I can’t wait! In our house, any time of the year is soup season, especially if I can get a hold of fresh ingredients! How about you?
Serves 8 – 10
- 1 batch of Tomato Soup!
- 1 batch of Mini Meatballs!
- 1 pound of your favorite bite sized pasta, I am using Ditalini
- Shredded parmesan cheese
- Fresh parsley, chopped for garnish
Cook your pasta and drain, set aside.
Combine the soup and the meatballs and simmer over medium heat until hot and bubbly, stirring occasionally.
Scoop some noodles into soup bowls, now cover with the soup.
Sprinkle with the cheese and a little parsley.
Serve with some nice warm bread. Delicious!
