Mac N Cheese Italiano!

This came to me while editing another recipe and after making a really yummy Unstuffed Shells Primavera. I really find nothing more comforting than a macaroni and cheese meal. I know that I am behind the times, but last summer I discovered prosciutto and I really love it! I want more things to use it in and I really think this will be wonderful!
Serves 8 – 10
- 1 package elbow macaroni, or your favorite bite sized pasta
- 2 tbsp. Olive oil
- 2 cloves garlic, minced
- ½ onion, minced
- 1 tsp. Italian seasoning
- 1 package (mine has 5 slices) prosciutto, chopped
- 1 cup light cream
- 1 cup ricotta cheese
- ½ cup shredded Parmesan cheese
- ½ cup shredded Mozzarella cheese
- Salt and pepper to taste
- ¼ bread crumbs
- ¼ cup grated parmesan
Preheat oven to 400° F
Cook pasta al dente per package and drain. In a large pot, heat olive oil over medium high heat. Add garlic and onion and cook for about one minute. Add the Italian seasoning and prosciutto, cook an additional minute. Reduce heat and stir in the cream, heat until hot, whisk in the cheeses. Whisk until smooth. Stir in the pasta and add salt and pepper to taste. Place in a casserole that has been sprayed with non-stick spray. Mix the bread crumbs and grated parmesan together and sprinkle over the top.
Place in oven and bake for about 10 minutes or until bubbly and top is lightly browned. Serve immediately.
