Lemon and Herb Hummus!

A recent discovery… I like hummus! As long as it is homemade. Quite some time ago I tried one out of the supermarket and I have to tell you, it was not something I wanted to ever try again. Though my boss and a friend I met blogging kept telling me to try it again. I did… Not only was it really good, it was really easy to make. And flavor? You can flavor this stuff in so many ways! My go to is just roasted garlic, but I wanted to try something a little different, a little fresher this time! Bursting with herbs and lemon…totally fresh taste! Can be served with so many things, too! Pita chips, pretzels, veggies…
Serves a crowd
- 1 can of chickpeas, ½ the liquid reserved (save the part you drain as well in case you want to add more)
- 1 tbsp. extra virgin olive oil
- 1 tbsp. fresh lemon juice
- 1 tsp. Herbs d Provence
- ½ tsp granulated garlic
- Salt to taste
Place all ingredients into your food processor or I like to use my immersion blender. Process until smooth. If it is too dry you can add a little more of the bean liquid. Taste for seasoning and adjust to your liking.
Serve with crunchy good things.
