Lemon Butter Asparagus!

Spring is always the best time to enjoy asparagus! I love it, especially the tiny pencil thin ones. That is what I found this weekend! So, I thought it would be such a perfect addition to my Grilled Beef Tenderloin Fillet and my Roasted Garlic Smashed Potatoes! Now it is really important to watch these, I really don’t like it when they get too soft! A little crisp is always nice with a fresh asparagus! I really am getting hungry writing these up!
- 1 bunch asparagus, washed and snapped
- 2 tbsps. Butter
- Juice from half a fresh lemon
- Salt and Pepper to taste
In a deep skillet, add just a little water, enough to have about a ¼ inch in the bottom. Place the asparagus spears in the water, cover, bring to a boil, reduce heat and simmer. Depending on the thickness of your spears check in 3 minutes for really thin ones up to 8 to ten for thicker ones.
Drain, put back in skillet and add butter, lemon juice and salt and pepper, stir until butter melts. Serve hot.
