Italian Sausage Stuffed Bread Loaf!

So many times I get up in the morning and look in the freezer to see what I have. Today a package of Italian Sausage leapt out at me! Well, not really, but it did sound good for dinner tonight! However what can I make that is easy, hearty and yummy for my guys? Maybe even use the grill so I don’t have to heat up the house! I really don’t want to make dough for pizza tonight or use pasta, something different. Oh! I have an idea!! I have to hit the store on the way home, but it will be so worth it!
- 1 loaf Italian bread
- 1 tbsp. olive oil
- 1 pound sweet or spicy Italian sausage
- 1 onion, julienned
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 1 tsp. oregano
- Several basil leaves, julienned
- Several spinach leaves julienned
- 2 roma tomatoes, diced and drained of excess juice
- 1 cup shredded mozzarella cheese, divided
- ¼ cup shredded parmesan cheese
Cut loaf in half-length wise and hollow out, leaving it about 1” thick all the way around, save the insides for something else or if you are like me, munch it down while making the rest of the meal, lol! (Of course if you do you might be too full to eat the finished product and that would be terrible!) Brush the inside with the oil and set aside.
In a large skillet brown the sausage, drain and rinse excess oil from sausage, return to skillet.
Add the pepper and onion and cook until onion becomes translucent.
Add the garlic and oregano and allow to cook an additional minute. Let cool slightly.
Sprinkle half the cheese in the bottom half of bread. Place sausage on top of the cheese and top with half of the basil and spinach. Place the sausage on top of that. Now for the tomatoes, put an indent into the sausage mixture and place the chopped tomatoes in there. On with the rest of the basil and spinach and top with the cheese!
It’s time for the top of the bread here. Spray a piece of heavy duty foil with some cooking spray and wrap loaf up tightly. Place on grill that has been preheated to medium (around 400°F same if you are using your oven) and heat for about ten minutes or until really hot and bubbly. Open foil, sprinkle with Parmesan and place back into grill of oven for an additional 5 minutes to crisp bread back up.
Carefully Cut into six sections and serve with a nice green salad!
