Italian Sausage Sandwiches!

I wanted to make something hearty and simple tonight for dinner that I would have some left overs for my Honey to take to lunch the next couple of days, too. I know that the tomato sauce may not travel well in that lunch box, but the buns veggies and meat will. He can put it all together at the time he wants to eat it. I think he will be very happy with these.
Serve them up hot and melty with a salad for dinner tonight, leftovers for lunch! Yes… he will like that. I am not a baker, but I found a great, quick recipe from the Taste of Home website for the buns, hyperlink below.
6 large buns (40 Minute Hamburger Buns)
1 pound ground Italian Sausage
1 cup Simple Tomato Dipping Sauce or your favorite spaghetti sauce
1 tbsp. olive oil
1 Onion sliced
1 bell pepper, sliced
6 slices provolone cheese
2 – 3 tsps. Italian Seasoning
A little shredded Parmesan Cheese
Prepare the buns per directions, or use your favorite.
Preheat grill to medium heat.
Form Italian sausage into 6 equal size patties. Be careful not to work the meat too much so it stays nice and juicy. Set aside.
Heat oil in a large skillet of medium heat. Add peppers and onions and cook until softened, being careful not to burn.
Prepare sauce as directed.
Place sausage patties on grill. Cook for five minutes, flip and repeat. Check internal temperature, it should be 160° – 165°F. Place slice of cheese on each patty, close lid and melt for 1 – 2 minutes. Remove from heat. Sprinkle Italian seasoning over the cheese.
Slice buns in half, place a cheesy patty on each bun.
Add some peppers and onions.
Top with a little sauce and sprinkle with Parmesan cheese.
