Italian Sausage And Potatoes!

I am so happy to be able to get out and grill tonight! I found these really yummy Italian Sausages at the store this weekend and I know my Honey is going to love them. He also loves pan fried potatoes and I haven’t been making them as often as I could.
- 4 Italian sausage links
- 2 tbsp. olive oil
- 4 medium sized red potatoes, washed and cubed
- 1 onion, coarsely chopped
- 1 bell pepper, coarsely chopped
- 2 tsp. garlic and herb seasoning
- Salt and pepper to taste
- Parmesan cheese
Preheat the grill to medium. Put sausages on the grill, and turn every few minutes until cooked through (internal temp of 160° F)
Meanwhile: In a large skillet, heat the olive oil over medium high heat. Add the potatoes. Cook, stirring often until potatoes start to brown.
Add the pepper and onion to the potatoes and continue to cook until softened. Sprinkle with the garlic and herb seasoning, salt and pepper and stir.
Place some of the potatoes on a plate and sprinkle with Parmesan, lay a sausage on top of the potatoes and serve. Tonight with Super Simple Slaw and garlic bread.
