Finally! I am on a recipe roll again! I have been so busy with summer activities I haven’t been able to write and photograph many recipes… well I have been writing them just not able to find time to prepare or photograph them. So, tonight is recipe 3 this week! Yay!
Italian Rice… well, I didn’t have anything thawed and I need to make two different meals, one vegetarian and one with meat and I have no time! So I found my Italian sausage in the freezer and an idea started to form. Rice, tomatoes, cheese, etc. For my vegetarian version and then throw in that browned sausage for the other! Easy, fast and yummy!
- 1 tbsp. Olive oil
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves of garlic, minced
- 1 cup whole grain rice
- 1 1/2 cups water or vegetable broth
- 2 cups diced tomatoes
- 1 cup diced zucchini
- 2 tsp. Italian seasoning
- 1 tsp. Oregano
- 1 tsp. parsely
- Salt and pepper to taste
- 1 cup shredded mozarella cheese
- 1/4 cup shredded parmesan cheese
- 1 pound ground Italian Sausage, browned and drained
Heat olive oil in a large skillet over medium high heat, add onion and pepper. Cook until onion becomes slightly translucent.
Add garlic and continue to cook for an additional minute.
Stir in the rice, vegetable broth and tomatoes and zucchini. Cover and simmer for about 20 minutes, or until rice is tender and liquid is absorbed.
Remove from heat and stir in the cheeses, Italian seasoning, oregano and parsley, salt and pepper to taste.
This is it for the vegetarian version, remove a portion.
Now stir in the sausage and continue to heat until hot. Scoop up and devour! Serve with some crusty bread and a salad.
