Italian Grilled Chicken Sandwiches!

Friday night is always a relaxed dinner night at my house when we don’t have sports or running around to do. I like to make simple things like pizza or sandwiches, even salads or burgers. I have been wanting to make a new sandwich so tonight is the perfect night to do so! This one will feature chicken that has been marinated in a little wine, oil and herbs. I think it will just be wonderful!
- 1 boneless skinless chicken breast, thinly sliced
- ¼ cup olive oil
- ¼ cup balsamic vinegar
- 1 tbsp. Italian seasoning
- Salt and pepper to taste
- 2 crusty rolls
- ½ cup shredded mozzarella cheese
- 2 bell pepper rings
- 2 thin slices of red onion
- ½ cup shredded Romaine lettuce
- ¼ cup chopped tomato
- Several hot pepper rings (Optional)
- ¼ cup sun dried tomato pesto
Place the chicken into a shallow dish. Mix together the olive oil, wine, Italian seasoning and salt and pepper.
Pour over the chicken. Allow to marinate for at least 20 minutes.
Preheat Grill to Medium
Place the chicken on the grill, turn after 5 minutes. Grill an additional 4 to 5 minutes until done. Remove from grill.
Place rolls on some foil. Slather with pesto and sprinkle ½ of the cheese on the rolls, top with the slices of chicken. Sprinkle the rest of the cheese on top.
Place back on grill for about 3 minutes or until cheese melts.
Place sandwiches on plates and add peppers and onion.
Top with remaining ingredients. Drizzle with the dressing.
Serve with some cut up veggies or fruit for a great summer meal!
