How do you feel about orzo? Well, I like the fact that it is pasta, but you can scoop up everything in one bit like in a rice dish! All the sauce, veggies, seasonings, meats… whatever is in there is in that one bite! Yum! I haven’t made orzo in a long time and have just been kind of craving it. I also enjoy a Philly Cheese Steak so I thought I might incorporate those flavors, too. So I thought I could make a one pot orzo dish tonight! All in one pot, perfect time saving dish! Hope you love it!
1 pound ground beef (or turkey)
1 sweet onion julienned
1 bell pepper coarsely chopped
1 jalapeno, seeded, deveined and finely chopped (optional)
1 clove garlic, minced
1 ½ cup orzo pasta
1 cup diced tomato
2 ½ cups beef broth/stock (or veggie)
2 tsp oregano
Salt and pepper to taste
½ cup shredded mozzarella or provolone
In deep skillet, brown ground beef over medium heat, breaking apart as it cooks. Add onion, pepper and jalapeno
Cook until onion begins to soften.
Add garlic, orzo, tomato.
Add beef broth. Cook for 10 minutes stirring occasionally… no need to drain the pasta after it cooks the liquid should all absorb. Add oregano and salt and pepper to taste.
Plate and serve with a sprinkle of the shredded cheese.
Serve with crusty bread and salad!
