Grilled Fontina, Apple and Sage Sausage Sandwich!

I have some leftover Fontina cheese and Sage sausage from a pizza recipe I just made a little while ago. I hate for this cheese to go to waste, it is a bit pricy, but… soooo good! It also melts very creamy so I thought it would make a really nice grilled cheese sandwich. Plus, you know how much I like to put apples in sandwiches and it is the perfect time of year for it!
- 8 slices potato bread
- 1 cup sage breakfast sausage, browned and drained
- 1 tart apple thinly slice
- 8 slices Fontina cheese
- 2 tbsp. butter, softened
Butter one side of 4 pieces of bread.
Place in large skillet butter side down, now place a slice of fontina on the bread in the skillet. On top of the fontina, place ¼ cup of the browned sausage, distribute it about the sandwich.
Next place some of the apple slices on top of the sausage and cover with another slice of the Fontina cheese.
Butter one side of the remaining bread slices and place butter side up on top of the sandwiches. Cover with lid and heat over medium low heat. Check often, but brown the bread to your desired darkness. Flip the sandwiches and repeat.
Cut in half, serve with some additional apple slices a nice salad or some chips or fries.
