Grilled Chicken Summer Pizza!

This lovely pizza features left over grilled chicken and a variety of fresh veggies! I love making new pizza recipes and it is a super way to use up left overs. These little flat breads make a great crust and do really well on the grill or in the oven. Fun, easy and very family friendly.
- 2 naan breads
- ½ cup roasted red pepper pesto, jarred or homemade
- 1 cup shredded mozzarella
- ¼ cup shredded parmesan
- 1 cup grilled chicken, cut up into cubes
- ½ cup zucchini slices
- ½ cup julienned spinach
- ½ cup mushroom slices
- ½ cup red onion slices
- ½ cup bell pepper slices
- 12 grape tomatoes, halved
- Several basil leaves, torn
- 2 tsps. Italian or Pizza seasoning
Preheat the grill to medium.
I have a grill sheet that I usually top with foil for this, you can just put foil on your grill if you don’t have one. Place the breads on the foil and top with the pesto sauce.
Sprinkle with the cheeses and top with the veggies and chicken. Mushrooms on my Honey’s but none for me.
Sprinkle with Italian Seasoning and a little more cheese (I added extra!). Place in grill and close lid. Check every few minutes to make sure that you aren’t getting the crust too brown. They usually take about 10 minutes.
Cook until cheese is melted and crusts are crisp. Remove from grill and cut into four slices each.
