Grilled Caprese Meatball Burgers!

Who likes Caprese? Me!! I mean really, what’s not to like? Fresh mozzarella, tomatoes, basil… mmmm. Now put it on a big ole meatball burger? Yes… you read it correctly! A meatball burger! I think you are really going to love this one! So get ready for this next Flavor Breakthrough!
- One small loaf Italian bread
- 1 pound ground beef
- ¼ cup bread crumbs
- 1 egg
- ¼ cup shredded parmesan cheese
- 1 clove garlic crushed
- 1 tbsp. Italian Herb paste
- 1 ripe tomato sliced
- 1 tbsp. olive oil
- Salt and pepper to taste
- 4 slices fresh mozzarella cheese
- dash of Italian seasoning
- 12 fresh basil leaves
Preheat grill to medium heat
Cut 4 sections of bread, and slice in half.
In a large bowl combine ground beef, bread crumbs, egg, parmesan cheese, garlic and herb paste. Work lightly to combine together.
Form into patties to fit your bread. (there were only three of us here tonight so I made the burgers a little bigger) Place on grill. Cook for 3 – 5 minutes the flip. Cook an additional 3 – 5 minutes.
Flip again and place a slice of the mozzarella on each patty, close lid and let melt, about one minute. Remove from grill.
Put one patty on the bottom half of each bread section. Sprinkle a little Italian Seasoning on top.
Place a slice of tomato on top of each patty, drizzle a little of the olive oil over each, sprinkle with a little salt and pepper to taste.
Top with 4 basil leaves on each sandwich, top and serve with a yummy salad.
My son isn’t much into the caprese thing so I used some of my Simple Tomato Dipping Sauce and made his a Grilled Meatball Marinara Burger!
